Abstract
Cinnamon oil (Cinnamomum Verum Sin C Zeylanicum) is one of the plants that have the potential to produce essential oils. Oil content in cinnamon reach 0,31-0,34. Cinnamon oil making process one using water steam distillation method. Time during the distillation process can influence the amount of yield of the oil produced. The longer the time of distillation the number willbe more and more yield and oil quality will be better. Based on the best practical result is when the 4 hour distillation obtained oil volume 4,3 ml, refractive index 1,25. Keywords : Cinnamon, Cinnamon oil, Distillation
