Abstract

Candlenut (Aleurites moluccana willd) is a plant whose seeds are used as a source of oil and spices. Candlenut oil quality is determined by the pre-treatment stage, the stage of oil production and oil refining stage. Stage pretreatment solution can be seeds and process heating / drying. For the manufacturing phase of the oil, the way and the types and methods of oil recovery can determine the yield and quality of the oil produced while refining step may include a reduction in water content, bleaching, and as well as filtration. The observed process variable is the effect of temperature and pressure on the yield and quality of walnut oil by using a hydraulic press used where the temperature is 600C and 800C and pressure of 1800 psi and 2000 psi. The resulting product had normal color / yellow. The highest volume of 242 ml obtained with experimental variables temperature 600C and pressure of 2000 psi. Evaporated water content highs of 4.228% with a temperature of 800C for 90 minutes. Density obtained from all the variables above the standard density is 0.9240 to 0.9290 gr/cm3. Obtained the highest yield of 46.64% with a variable temperature of 800C and pressure of 1800 psi. The value of the acid number and saponification numbers obtained are still within tolerable limits so that the oil obtained has good quality. Results of analysis of multiple parameters to indicate candlenut oil products meet the specification by the Indonesian National Standard (SNI) with a number 01-4462-1998.
