Abstract
Background: strenuous physical activity can increase oxygen consumption 100- 200-fold due to the increased metabolism in the body. Increased use of oxygen mainly by contraction of the muscle, causes an increase of electron leakage from the mitochondria that will produce ROS. If the levels of free radicals is too high such as when doing strenuous physical activity, the ability of endogenous antioxidant to neutralize free radicals become inadequate resulting in an unbalanced state between free radicals and antioxidants called oxidative stress. One of the flavonoid components of the herbs that can act as antioxidants are natural pigments called anthocyanins. Purple sweet potatoes contain high anthocyanins levels at 110 mg-210 mg /100 g. The processing of purple sweet potatoes into into a tape (fermented sweet potatoes) is an effort to improve the usability of the raw material of purple sweet potatoes. In addition, the processing of purple sweet potatoes into tape (fermented sweet potatoes) also been proven to increase the stability and purity of anthocyanin Aim: to determine the effect of fermented purple sweet potatoes extracts to MDA levels in rat blood after maximal physical activity. Methods: This research is true experimental with post test only control group design in rats. The treatment given is fermented purple sweet potatoes extracts (Ipomoea batatas L.) and provision of maximum physical activity in rats, while the output is MDA rats blood. Results: Posthoc LSD test showed no significant difference (P=0,916) of plasma MDA levels between the group of rats given maximal physical activity (MDA K2=15,84 nmol/l) and control (MDA K1=15,77 nmol/l). Meanwhile, there was significant difference (P=0,008) of plasma MDA levels between the group of rats given fermented purple sweet potatoes extract (MDA K3=13,73 nmol/l) and control (MDA K1=15,77 nmol/l). Significant difference (P=0,042) of plasma MDA levels between the group of rats given maximal physical activity and fermented purple sweet potatoes extract (MDA K4=14,35 nmol/l), and maximal physical activity without fermented purple sweet potatoes extract (MDA K2=15,84 nmol/l). Conclusions: There was significant differences of plasma MDA levels between the groups of rats given maximum physical activity and fermented purple sweet potatoes extract, and maximum physical activity without fermented purple sweet potatoes extract. But need reconsideration because of the differences in levels of plasma MDA were no significant between group of rats given maximum physical activity and control.
