Abstract

Kadar kolesterol normal yang dibutuhkan oleh tubuh sebesar 1,7 g/L darah. Kelebthan kadar kolesterol dalam tubuh dapat mengaldbatkan berbagai macam penyakit akibat penyumbatan pembulub. darah. Hati sapi mempunyai kandungan kolesterol tinggi sehingga kurang aman bila dikonsmsi. Dari hal tersebut maka dilakukan penelitian pengurangan kadar kolesterol dalam hati sapi dengan mengg-urtakan P-siklodekstrin. Penelitian dilakukan dengan memvariasi konsentrasi p-siklodekstrin, dan untuk menganalisa kolesterol digtinakan spektrofotometri UV-Vis. Hash penelitian menunjukkan pengurangan kolesterol optimal terjadi pada penambahan 40 Mg p-sildocleicstin dengan person penurunan kolesterol 57,838 % Berdasarkan. hasil penelitian dapat disimpulkan bahl,va kolesterol dalam hati dapat dikurangi menggunakanp-siklodekstrin. deThe normally cholesterol which is needed by our body is 1.7 g/I., blood. Hypercholesterol in the body caused many kinds of diseases as a result of the abstraction of bloob vessel. Beef liver's contains high of cholesterol so that it doesn't safe when is consumed. Due to fact, we have done a research that to reduce cholesterol contains in beef liver's by variying of f3-cyclodex-trii' concentration and to analyst cholesterol value by spectrofotometer UV-Vis. The result of research showed that reducing cholesterol would be optimum at the addition of 40 mg f3•cyclodextrin with percentage cholesterol decreased 57.838%. Based in the research result can be concluded that cholesterol in the beef can be reduced by using p-eyeloxhin.
