Abstract
Industri tepung tapioka merupakan salah satu industri yang potensial menyebabkan masalah lingkungan. Limbah cair rata-rata yang dihasilkan dari industri tepung tapioka adalah 20 m3 dan limbah padat sebesar 3 ton untuk setiap ton tepung yang dihasilkan. Upaya perbaikan produksi bersih yang dilakukan diharapkan akan meningkatkan efisiensi proses produksi sekaligus memperbaiki kinerja lingkungan. Tujuan penelitian ini adalah mengkaji peluang dan kelayakan penerapan produksi bersih pabrik tapioka berdasarkan penggunaan air, energi, dan karakteristik limbah yang dihasilkan dan menghasilkan alternatif perbaikan produksi bersih untuk proses produksi. Hasil penelitian di UD. Sinar Cerah menunjukkan bahwa konsumsi singkong untuk bahan baku adalah 50 ton/hari dengan konsumsi air 101,39 m3 per hari, listrik 260,14 KWh per hari dan Premium 4 liter per hari serta Solar 3 liter per hari. Rekomendasi peluang penerapan produksi bersih antara lain menggunakan tatakan saat proses pemotongan pongkol yang mampu mengurangi NPO 175 kg atau Rp. 175.000,00 per hari, mengatur ulang bukaan keran penyemprotan singkong pada proses pencucian tahap I dapat mengurangi konsumsi air sebanyak 1,35 m3 per hari, menggunakan air buangan dari proses pencucian tahap II dapat mengurangi konsumsi air 8,4 m3 per hari, membuat SOP waktu pengendapan yang optimal sehingga mengurangi kehilangan pati sekitar 73 kg per hari, mengumpulkan ceceran tepung tapioka di lantai jemur setelah proses pengeringan dapat meningkatkan produk akhir 60 kg atau Rp. 240.000,00 per hari, dan mengumpulkan ceceran tepung tapioka proses penepungan dan pengemasan meningkatkan produk akhir 110 kg atau Rp. 440.000,00 per hari. Penerapan produksi bersih dapat meningkatkan keuntungan secara ekonomi dan lingkungan. Sinar Cerah, showed that cassava consumption as raw material is 50 ton/day with water consumption is 101,39 m3 per day, electricity 260,14 KWh per day also fossil fuel gasoline 4 liter per day dan diesel 3 liter per day. Alternatives implementation of cleaner production that can be recommended are using pod while rod cutting process that can reduce NPO until 175 kg or Rp. 175.000,00 each day, re-setting of spraying valve for washing process step I can reduce water consumption 1,35 m3 each day, re-use wastewater from washing process step II for washing process step I can reduce wastewater generation until 8,4 m3 per day, make standard operational procedure to optimize settling time of starch potentially to reduce starch loss until 73 kg per day or Rp. 292.000,00 per day, collecting spill of tapioca starch in drying floor after drying process potentially increase of final product 60 kg or Rp. 240.000,00 per day, and collecting spill of tapioca starch in flouring and packing process can increasing the manufacture revenue until 110 kg of final product or Rp. 440.000 per day.
