Abstract

Roselle (Hibiscus sabdariffa L.) is one of the plants that contain anthocyanin pigment. The purpose of this research is to study influence extraction method of total anthocyanins roselle using spectrophotometic differential pH method and to knows solvents are most effective. Extraction anthocyanin was done with maceration on 250C, determination of maximum wavelength from result of anthocyanin extraction and measurement of total anthocyanin. Maximum wavelength was 510 nm and 700 nm. The total anthocyanin from maceration 250C with ethanol 70% solvent were 9,652 mg/100gr, with aquadest solvent were 1,737 mg/100gr, and with blend of ethanol and aquadest (ratio 1:1) were 1,737 mg/100gr. Therefore, the effective solvent for extraction of anthicyanin from roselle was ethanol 70% Kata kunci : Roselle, Anthocyanin pigment, Maceration, Extraxtion
