Abstract

Pineapple is a fruit plants such as shrubs which has the scientific name Anenas comosus. Pineapple is a fruit plants such as shrubs with yellow flesh. Cellulose is found in many plants, mostly in the cell wall and the woody parts. The pulping process used in this study is the process of soda, pineapple crown that is releasing fibers with sodium hydroxide solution by using a digester. This study aims to determine the effect of concentration cookers and cooking temperature on the quality of the pulp produced. The variables used in this study was 10% concentration cookers, 105oC cooking temperature, cooking time 95 minutes and 10% concentration cookers, 110oC cooking temperature, cooking time 95 minutes.
