Abstract

Di kabupaten Wonosobo banyak industri kecil dan menengah yang mengolah buah carica menjadi manisan carica salah satunya yaitu CV. YuasaFood Berkah Makmur. Dalam proses pembuatan manisan carica menggunakan teknologi yang sederhana, sehingga cenderung terjadi bentuk inefisiensi dalam penggunaan bahan, energi dan air. Hal ini akan meningkatkan timbulan limbah pada proses produksi, sehingga dapat menyebabkan kerugian secara ekonomi dan lingkungan. Salah satu upaya untuk meningkatkan efisiensi dengan cara menerapkan alternatif produksi bersih. Penelitian ini bertujuan mengidentifikasi timbulan limbah pada proses produksi, alternatif peluang penerapan produksi bersih dan menganalisis keuntungan ekonomi dan lingkungan terhadap alternatif peluang produksi bersih pada proses pembuatan manisan carica. Hasil penelitian menunjukkan pemakaian buah carica sebanyak 18 ton/bulan. Pemakaian air sebanyak 185.257 liter/bulan. Pemakaian listrik untuk alat produksi 707,304 kWh/bulan. Terjadi inefisiensi pada proses pengemasan dan penyaringan hasil rebusan sekitar 8 liter/ hari, pada proses pencucian 3.675,6 liter/hari, pada penggunaan listrik 2,4 kWh/hari dan penggunaan gas LPG 275,85 MJ/hari. Peluang penerapan produksi bersih memberikan manfaat ekonomi dan lingkungan yaitu penggunaan wadah penampung pada proses pengemasan dan penyaringan hasil rebusan sirup penghematan Rp.1.200.000/bulan serta mengurangi limbah cair 0,93% sebesar 240 liter/bulan. Penggunaan kembali air bekas cucian dapat menghemat Rp.380.424/bulan serta mengurangi limbah cair 59,52% sebesar 110.268 liter/bulan. Pemanfaatan kulit sebagai kompos diperoleh keuntungan Rp.2.220.000/bulan serta mengurangi limbah padat. Segera mematikan energi (listrik, LPG) jika sedang tidak dipakai dapat menghemat listrik 10,18% sebesar 72 kWh atau Rp.97.580/ bulan dan gas LPG 11,76% sebesar 8.275,5 MJ atau Rp. 1.946.000/ bulan. Alternatif langkah perbaikan penerapan produksi bersih berdasarkan skala prioritas analisis kelayakan secara teknis, ekonomi dan lingkungan yaitu Penggunaan kembali air bekas pencucian, pemisahan antara limbah padat dan limbah cair, segera mematikan energi (listrik, LPG) jika sedang tidak dipakai, penggunaan wadah penampung pada proses penyaringan hasil rebusan sirup, penggunaan wadah penampung saat pengisian sirup pada proses pengemasan, penerapan standar operasional produksi penggunaan alat dan bahan, penerapan good house keeping, pemanfaatan kulit buah carica untuk pembuatan pupuk kompos. Dengan menerapkan produksi bersih maka akan meningkatkan keuntungan secara ekonomi maupun lingkungan. One effort to improve efficiency by implementing cleaner production alternatives. This study aims to identify the generation of waste in the production process, alternative opportunities of applying cleaner production and analyze the economic and environmental benefits of the alternative cleaner production opportunities in the process of making candied carica. The results showed carica fruit consumption as much as 18 tons / month. The use of water as much as 185.257 liters /month. Electricity consumption for production equipment 707,304 kWh /month. Inefficiency in the process of packaging and filtering decoction of about 8 liters /day, the washing process 3675,6 liters /day, the electricity use of 2,4 kWh /day and the use of LPG 275,85 MJ /day. Opportunities of applying cleaner production provides economic and environmental benefits that the use of container vessel in the packaging process and filtering the boiled syrup IDR.1.200.000 savings /month and reduce liquid waste 0,93% at 240 liters /month. Reuse of water used washing can save IDR.380.424 /month and reduce wastewater 59,52% amounting to 110.268 liters /month. Utilization of the skin as compost obtained profits IDR.2.220.000 /month and reduce solid waste. Immediately turn off the energy (electricity, LPG) when not in use can save electricity of 10,18% amounting to 72 kWh or IDR.97.580 /month and LPG gas of 11,76% amounting to 8275,5 MJ or IDR. 1.946.000 /month. Alternative steps to improve the implementation of cleaner production is based on the priority scale feasibility analysis is technically, economically and environmentally is reuse of used water from sinks, the separation of solid waste and waste water, immediately turn off the energy (electricity, LPG) when not in use, the use of container vessel in the process filtering the boiled syrup, use syrup container vessel while charging the packaging process, the application of operational standards of production use of tools and materials, application of good house keeping, utilization carica fruit peels for composting.
