Abstract
Spectrophotometer is an instrument to measure, absorban, and consentration that has the samples as a function of wavelength and measurement of a samples at a wavelength particular. One of the spectrophotometer working principle is based the phenomenon of absorption of light by certain species in the ultraviolet and visible light (visible). Raw materials usedinthis labisfermented cassavaaddedpineapple juice. Proteinis found infruits, thegiver ofred coloron the fruit. In this studywas observedfourvariables:the ratio ofthe addition ofpineapple juice0ml, 20ml, 30ml, and 50ml. Producevariablelevels of proteininthe1.4%, 6.8%, 8.4% and 10.0%. Comparisonpeenambahanmorepineapple juiceyieldhigher protein.The thingsthataffect the results ofpracticumisthe cuvette hygieneas it can causeerrorsinthe reading ofabsorbanceandtransmittance.
