ANALISIS RANTAI NILAI (VALUE CHAIN) TAHU KUNING DI SENTRA INDUSTRI TAHU KECAMATAN ADIWERNA, KABUPATEN TEGAL

Abstract

Most of people in adiwerna subdistrict works on industrial sector, such as food industry. One of small manufacture industry is center of tofu industry. This industry center is the biggest tofu industry in Tegal regency. This tofu manufacture producted with boiler and traditional systems. The tofu production marketed up to other regency with average production capacity 20-140 kg per day. This research purpose is to find the development of tofu UMKM in tofu industry center in adiwerna subdistrict, to analyze value chain yellow tofu industry in adiwerna subdistrict and to decide reinforcement strategy of tofu industry. Analysis methode that is used in this research is R/C ratio analysis to find work feasibility, value chain analysis count the margin of each value chain cast and descriptive analysis through in-depth interview to decide reinforcement strategy of tofu industry. Sample used is quota sampling with 80 tofu producers and snowballing sampling methode used to choose soya distributor 2 respondents, retail seller 10 respondents, seller of tofu outcome food 15 respondets, and 4 key person respondents from A-G-B-C substance. This research found that tofu industry value chain’s margin in soya distributor level is Rp 579,168. Margin of tofu outcome food is Rp 33,016, Margin of retail is Rp 11,094, while margin of tofu producer level is Rp 10,451. The only one institusional is association that its function still limited on tofu waste management, the corporation no longer active, there is no technology support to make new product inovasion.
