Abstract
Ice cream is a frozen dairy products dairy shaped solid that is made from a mixture of milk, sugar, stabilizer ingredient, flavor and fragrance materials with or without the addition of other food ingredients (emulsifiers and coloring) and packaged in a special plastic or cardboard. Homogenization process in making the ice cream potato Cilembu durian flavor aims to stir all the ingredients evenly, divide and spread fat globule, make fluffier texture and can produce a more homogeneous product. Material a necessary ingredient in the manufacture of ice cream flavors potato Cilembu durian, among others: Cilembu yam, durian, skim milk, sugar, and eggs. The main tool in the manufacture of ice cream potato Cilembu durian flavor ice cream maker is a tool which is a set of tools which consists of a stirrer, rpm control, and temperature control. Experiments have been conducted to show that the value of overrun and the melting rate of the ice cream produced and inversely proportional to the rpm speed. Low rpm speed will be the speed of melting ice produces a long and overrun a great value, contrary to the high rpm speed will result in melting the ice with fast speed and overrun a small value, it is because the ice cream will be more homogeneous quickly melts and freezes more slowly because the water content in ice cream is very little. Durian ice cream without potato Cilembu seen that at a speed of 8,000 rpm overrun its value 14.3% and the melting speed of 15 minutes. At a speed of 10,000 rpm value of its 13% overrun and the melting speed of 14 minutes. Durian ice cream without melting potato Cilembu produce a fast enough pace and produce durian aroma, light yellow and the taste of durian. Durian ice cream on potatoes without Cilembu produces a very soft texture because it uses a kind of raw material that is durian. Cilembu potato ice cream with durian seen that at a speed of 8,000 rpm overrun its value 4.3% and the rate of melting 21 minutes. At a speed of 10,000 rpm overrun its value 1.3% and the rate of melting 19 minutes. Cilembu potato ice cream with durian produce durian aroma, brownish yellow and dominant taste of durian. Cilembu potato ice cream with durian produce melting speed long as Cilembu potato contains enough water and fiber.
