Abstract
Experiment is done to analyze work temperature of "teri / stolephorus" fish drying with natural air flow system. The analyzing work temperature of fish drying is based on moisture of fish, temperature, time and efficiency. Research is done in laboratory with using drying machine of with natural air flow system. And based on analyzing data it shows that moisture of fishes can achieve 25% when work temperature is controlled 77C and work time 5 hours. And efficiency can raise 35% when work temperature is controlled 62C and work time 8 hours
