Abstract
Cooking oil is one of the basic human needs in food processing. Waste from the rest of the frying process can still be used for other purposes and the productivity can be improved by refines it and converting it into Monoacylgliserol (MAG) and Diacylgliserol (DAG). Monoacylgliserol and Diacylgliserol are useful as emulsifiers and surfactant for the food, cosmetics and pharmaceuticals products. Generally, MAG and DAG production uses glycerolysis process conducted at high temperatures. These high temperatures result in dark and undesirable odor product. This study aims to investigate the glycerolysis of used frying oil process at low temperatures. Used Frying oil of 100g is prepared by refining and adsorption. The oil to glycerol ratio varies from 1:2 to 1:4, while the solvent to oil ratio is 1:1 v/w. reaction time is 4 hours. The amount of catalyst (NaOH) will be varied at 1 and 3 % weight of the oil The results showed that the optimum conditions (relatively good condition) was obtained at R = 4, temperature 80 oC and the weight of the catalyst 3% w /w with achievement 94.35% of conversion with the reaction rate constant = 0766 L /hour.mol and activation energy = 1286, 388 J / mol.
