Abstract
Lycopene is a carotenoid needed by our bodies and one of the strongest antioxidants. Its ability to control singlet oxygen (oxygen in the form of free radicals) 100 times more eficient than vitamin E or 12500 times better than gluthation, unfortunately the utilization of lycopene extract from papayas is still uncommon, because of lack of knowledge about this. The goals of this research are to obtain crude extract lycopene from the papaya and to study the effects of variables of lycopene extraction from fresh papaya. The method employed in this research consist of three steps, first is preparation of papaya raw material, the second is lycopene extraction step using one stage batch extraction, and the last one is vacuum distilation to aqcuire crude extract. Variables in this research are temperature (40 – 50 oC), time (15 – 45 minutes), and weights of sample (dry basis) (23 – 35 grams). Spectrophotometry method is employed to analyze lycopene content of the extracts. Design of experiment is compiled by Response Surface Methodology (RSM) with Statistica 6 software. The results obtained for optimum extraction is at the sample weight 35 mg, temperature of 50oC, and 15 minutes. With the crude extract at 1.356 mg / L
