Abstract

Proses pengeringan secara alami yang diperlukan untuk mengawetkan ikan mempunyai beberapa kekurangan seperti: waktu yang lama, perlu beberapa kali proses pembalikan dan kurang higienis. Oleh karenanya perlu dirancang suatu alat pengering ikan teri dengan system rotary berbahan bakar batubara untuk meningkatkan teknologi pengeringnan dan kualitas ikan teri kering. Mesin pengering ini mempunyai 3 bagian utama: ruang bakar batubara, ruang pengering yang dilengkapi rak pengering berputar terbuat dari bahan alumunium dan saluran pembuangan asap bahan bakar dan uap air ikan teri. Mekanisme pembuatan alat terdiri dari evaluasi design, persiapan alat dan bahan, pengerjaan alat di bengkel, uji performa dan pemeliharaan. Kemudian hasil pengujian performa alat pengering menunjukkan bahwa untuk mengeringkan ikan teri dengan kapasitas maksimum (8kg) hanya membutuhkan waktu pengeringan 3,5 jam. Termperatur rata-rata ruang pengering sebesar 66,03oC. Efisiensi aliran panas dapat mencapai antara 35,02%-60,03%. Dan kadar air ikan teri kering dapat mencapai antara 10-20 %. Kata kunci : Pengering ikan, ikan teri, sistem rotary, efisiensi. The drying process is naturally needed to preserve the fish. It has several lacks such as: spend long time, need some reversal processing steps and less of hygienic treatment. Therefore it needs to design a fish drier with coal-fired rotary system to improve technology and quality of dried stolephorus fish. This drying machine has three main parts: coal combustion chamber, drying place equipped with rotary drying rack which is made of aluminum and the drains for smoke and the vapor of stolephorus fish. Mechanism of making drying machine consist of design evaluation, preparing tools and materials, doing in workshop, performance testing and maintenance. Then testing of drying machine performance show that time of drying only need 3,5 hours for maximum capacity (8 kg). Average temperature of drying place reach 66oC. The Heat Flow efficiency can reach between 30,02% - 60,03%. And water content of stolephorus can reach between 10%-20%.. Keywords : fish drying, Stolephorus, rotary system, efficiency.
