Abstract

Dragon Fruit is fruit from several varyety cactus from kingdom Hylocereus dan Selenicereus. The fruit parentage from mexico, central america, south america. And now there is also at asia country as Taiwan, Vietnam, Filipina and Malaysia. Dragon Fruit (Hylocereus Undatus) are tropical fruit that have a lot of advantagesthat another fuits. One of dragon fruit part that can be utilized is its rind, which is asproducer of nature pigment. Dragon fruit skin (Hylocereus Undatus.) can be used ascolouration nature of food because its can resulting red by anthosianin pigment as cyanidin 3 sophoroside, and cyanidin 3 glucoside. On this research is emphasized on temperature optimu. for extracting dragon rind pigment with solven water and to know that pigment stability oncondition sort. This research consisting of two steps. firs step to extract mangosteen skin pigmentwith water as a solven on various temperature (80 0 C, 90 0 C, 1000 0 C, 110 0 C, 120 0 C, ), Step II is test resulting pigment stability on condition sort. The Result observationaling to point out that pigment extraction of dragon fruit skin (Hylocereus Undatus) on temperature 120 0 C get pigment extract that have supreme color intensity with it maximal absorbance 0,493. stability test result e on various condition is as follows (1) pH's Influences, to more low value pH so absorbance the value to more higt (2) sun-shine Influences to more long time to dry in the sun value absorbance to more low.
