Abstract

Alginat merupakan polisakarida ekstraselluler salah satunya terkandung dalam alga coklat seperti Sargassum sp., tersusun dari polimer asam-13-D¬manuronat dan asam-a-L-guluronat. Isolasi alginat dari Sargassum sp. menggunakan metode Green yang dimodifikasi dengan rendemen 43,65%. Molekul alginat tidak mempunyai gugus hidrofobik sehingga kemampuan alginat sebagai zat pengemulsi bekerja pada konsentrasi zat teremulsi yang rendah. Oleh karena itu kemampuan alginat sebagai zat pengemulsi perlu ditingkatkan. Salah satu cara yang dapat dilakukan dengan menambah gugus hidrofobik dari n¬atkohol ke dalam molekul alginat dan mengubahnya menjadi suatu senyawa turunan alginat melalui reaksi esterifikasi. Telah dilakukan sintesis turunan alginat menggunakan n-alkohol dengan katalis asam sulfat melalui reaksi esterifikasi Fisher. Hasil penelitian menunjukkan bahwa sintesis ester alginat dengan waktu reaksi selama 4 jam, suhu 30 — 40 °C dengan variasi panjang rantai dan variasi pH awal reaksi akan menghasilkan rendemen, derajat esterifikasi dan nilai konsentrasi misel kritis (C.M.C) yang berbeda namun secara statistik tidak berbeda jauh. Rendemen produk heksil alginat diperoleh pada pH 3 sebesar 16,5705% yang menunjukkan nilai c.m.c sebesar 2 ppm dan nilai DE sebesar 0,304 sedangkan pada butil alginat dan propil alginat pada pH 3 yaitu 18,2552% dan 12,0934%, menunjukkan nilai c.m.c sebesar 4 ppm dan 8 ppm, nilai DE berturut-turut 2,814 dan 1,053. Alginic is an extracellular polysaccharide, which consinst of a-L¬guluronic acid and 13-D-manuronic acid. Alginate is found in all the larger brown algae. Alginate is produced from isolation of Sargassum sp. using modified green's method. Percentage of product from this isolation is 43.65%. Alginate molecule does not contain hydrophobic group. At this condition, emulsifying property of alginate molecule will occur with presence of emulsified compound at low concentration. For this reason, the emulsifying property of alginate should be improved. Improving the emulsifying property could be done by adding hydrophobic group n-alcohol into alginate molecule and continued with converting to derivate compound was obtained by esterification mechanism. Synthesis of alginate derivative compound was preformed by Fisher's esterification mechanism with sulfuric acid as the catalyst. The result of this reseach shows the synthesis of ester alginate for 4 hours reaction at temperature of 30 — 40 °C with variation of n-alcohol chain and initial pH produces various percentage of product, esterification degree value and critical micelle concentration (C.M.C) value but these value statically are equal. Percentage of product 16.5705% is obtained at initial pH of 3 with hexyl alcohol as hydrophobic group. The c.m.c value at this condition is 2 ppm and the DE value is 0.304. Product percentage value in synthesis n-alcohol alginate with butyl and propyl as hydrophobic group at pH of 3 are 18.2552% and 12.0934%, and the c.m.c value are 4 ppm and 8 ppm respectively, the DE value are 2.814 and 1.053.
