Abstract

Asam sitrat atau asam 2-hidroksipropana-1,2,3 trikarboksilat merupakan salah sate metabolit primer yang terbentuk dalam siklus asam trikarboksilat. Asain sitrat dapat terakumulasi secara ekstraseluler dalam media karbohidrat dengan adanya mikroorganisme yang mempunyai kemampuan sebagai penghasil asam sitrat. Penelitian ini bertujuan untuk memperoleh asam sitrat melalui proses mikrobiologi yaitu fennentasi karbohidrat dengan jamur Aspergillus roger. Karbohidrat yang digunakan adalah jimbah slondok karena limbah ini mengandung pati sebesar 35 , Dalam penelitian ini dilakulcan variasi pH ant= 2 sampai 7 dengan waktu fermentasi 1-8 hari. Dan hasil penelitian dengan berbagai variasi pH diperoleh pada pH awal 3 terakumulasi asam sitrat paling besar yaitti 16 g/L. Pada proses kristalisasi didapatkan kristal asam sitrat dengan titik leleh 152 °CCitric acid or 2-hidroxypropane-1,2,3-tricarboxylic acid is one of the primary metabolic which is formed in tricarboxylic acid cycle. Citric acid can be accumulated extracellulerly in the carbohydrate medium by the present of the microorganism which have the ability to produce the citric acid. The research aim is get the citric acid trough the process of microbiology that is carbohydrate fermentation with Aspergillus niger. The carbohydrate which is used is gained from "slondok" waste since it contains of 35 % amylum, The research does variation pH from 2 until 7 for 1 until 8 th day fermentation time. It is found result that by having the wide variety of pH, at pH 3 it is gained that the highest accumulated by citric acid is 16 g/L.In the crystalitation process can be found the crystal of citric acid has its melting point at 152 °C
