Abstract

Kestabilan emulsi tergantung pada beberapa kondisi diantaranya pH. Adapun pengaruh pH terhadap kestabilan emulsi ini telah diuji melalui eksperimen dengan menggunakan fosfolipid sebagai zat pengemulsi. Campuran yang terdiri dan minyak dan fosfolipid ditambahkan dengan air melalui proses titrasi sedikit demi sedikit. Dengan memvariasikan larutan air pada kondisi pH tertentu, yakni penambahan HC1 untuk memperoleh larutan air pada kondisi asam dan penambahan NaOH untuk memperoleh larutan air pada kondiSi basa. Hasil penelitian menunjukkan bahwa kestabilan emulsi minyak-fosfolipid-air dipengaruhi oleh pH dan emulsi paling stabil terjadi pada pH= 7. Ternyata perubahan pH pada sistem emulsi akan menyebabkan emulsi lebih mudah pecah. Dengan demikian emulsi semakin tidak stabil. Emulsion stability depends on several conditions, for example pH. The influence of pH to stability of emulsion.The influence of pH to emulsion stability had been done through experiment by using fosfolipid as emulsifier. The mixture consist of oil and fosfolipid and adds with water through titration process little by little by variating water solution on certain pH condition., that HCl addition to get water solution on acid condition with this variation the difference of time of emulsion will be found, where the difference of time of emulsion fission for water solution at netral pH will be longer than at acid condition or base condition. Results showed that stability of emulsion oil-phospholipid-water was affected by pH and the most stable emulsion was occured at pH = 7. The influence of pH on emulsion system will caused emulsion more easily broken. So emulsion will be unstable. iv
