Abstract

Telah dilakukan, penelitian kadar protein dalam bungkil minyak kelapa dan kualitas minyak hasil fermentasi. Variasi yang dilakukan pada penelitian ini adalah perubahan suhu fermentasi dan perbedaan bahan yang digunakan sebagai air bibit. Penentuan kadar protein dilakukan dengan menggunakan metode Kjeldahl. Dengan metode ini yang diukur adalah total nitrogen yang dihasilkan oleh bahan makanan yang didestruksi oksidatif. Dalam hal ini dianggap bahwa seluruh nitrogen berasal dari protein sehingga untuk mendapatkan total protein hasil total nitrogen dikalikan dengan faktor konversi. Sedangkan kualitas minyak ditentukan dengan kadar asam lemak bebas (%FFA) dan angka peroksida. Hasil penelitian menunjukkan bahwa prosentase terbesar yaitu sebesar 40,067% diperoleh dari air bibit yang menggunakan air kelapa air (9:1) pada suhu 40 C, dengan kadar asam lemak bebas sebesar 0,1786% dan angka peroksida sebesar 0,0048. The research about the protein content from the residue of the coconut oil and quality of coconut oil obtained by fermentation has been made. In this research, the variabels that varied are the substance of the starter and the temperature of the fermentation. Kjeldahl method was used to analyse the quantity of the protein content. This method measures the total nitrogen from the foodstuff by which destroyed by oxidation. In this case, the nitrogen is considered only from the protein. So, the total protein can be obtained by multiplying the total nitrogen by the conversion factor. Free fatty acid content (% FFA) and peroxide number was used to analyse the quality of coconut oil. The experimental result show that the highest prosentage of the protein content 40,067% is gained from the coconut water water (SW as starter, at 40 C with %FFA 0,1786 and peroxide number 0,0048.
