Abstract
Nitrogen adalah elemen penting dalam senyawa organik. Metode Kjeldahl merupakan metode dasar untuk menentukan nitrogen dalam •enyawa organik. Metode ini terdiri dari 3 tahap. Perubahan nitrogen menjadi amonium hidrogen sulfat melalui destruksi senyawa organik denga asam sulfat pekat dan katalis Se. Setelah destruksi sempurna, larutan dibuat alkalis dengan NaOH 40 %. Amonia bebas basil destilasi ditampung dalam larutan asam borat. Amonium borat diti•rasi dengan asam klorida standar. Tes Biuret dan tes Ninhid•in dapat digunakan untuk analisa protein secara kualitatif, dan tes Ksanthoprotein, tes Molisch, tes Hopkins-Cole dan tes Sulfida untuk menauji jenis asam amino tertentu. Kada protein dalam ikan.Beronang adalah 57,185 1,277 %, •ikan Kerapu 58,28 ± 1,66 %, ikan Kerong-kerong 59, 27 ± , 52. %. Nitrogen is an important element in organic substances. The Kjeldahl method, as a basic method, for determining nitrogen in organic in substances consists in converting the nitrogen into ammonium acid sulfate while decomposing the organic matter with boiling sulfuric acid and Se as catalyzer. After the organic matter has been decomposed completely, the solution is madE'l alkaline, liberating amcni.a which is distilled into boric acid solution. The ammonium borate is titrated directly with HC1 standard acid. Biuret and Ninhidrin tests could be used for determining qualAtative analysis of protein, and Xanthoproteic, Molisch, Hopkins-Cole tests and test for sulfure were the specific tests of amino acid. Beronang fish include 57,185 ± 1,277 % of protein, Kerapu fish 58,28 ± 1,66 % and Kerong-kerong fish 59,97 ± 2,59 %
