Abstract

Telah dilakukan penelitian kandungan zat besi dalam kedelai dan tempe. Obyek yang dianalisa adalah kedelair rebus, kedelai pecah , kedelai terfermentasi 1 hari dan kedelai terfermentasi 2 hari atau tempe. Besi yang as dibuat kompleks dengan thiosianat menjadi [Fe(SCN)6] yang berwarna merah. Penentuan kadar zat besi diukur dengan spektrofotometer model 390. Hasil penelitian menunjukkan kandungan zat besi pada kedelai rebus 58,22 ppm, kedelai pecah 15,85 ppm, kedelai terfermentasi 1 hari 25,53 ppm dan tempe 62.84 ppm. The iron concentration in soy-bean and tempe have been measured. Object to analysis is fermentation in ; 1st, 2nd day , boiled and split soy-bean. Irbn fomplexed with thiocyanat become red colour IFe(SCN)6] . Measurement was done by spektrofotometer type 390. The result of observation, indicated that concentration of iron in tempe with fermentation 1st, 2nd day is : 25.53 PPM, 62.84 ppm, and in boiled and split soy-bean is : 58,22 ppm and 15,85
