Abstract

Sejalan dengan PIP UNDIP yaitu Coastal Eco Development, upaya pengembangan IPTEKS kedepan harus dapat berkontribusi dalam penyelesaian masalah lingkungan wilayah pantai. Kota Semarang dengan aktivitas dan mobilitas penduduk sangat tinggi, serta berbagai sajian jasa boga di berbagai kawasan, menangung konsekuensi berbagai sampah yang berupa sisa makanan dari dapur maupun sisa sajian makanan pada pedagang kakilima potensial menjadi masalah lingkungan. Usaha peternakan disisi lain mengalami tekanan berupa keterbatasan penyediaan pakan, sebagai akibat semakin bersaingnya dengan upaya memenuhi kebutuhan manusia. Penelitian dilakukan untuk mengkaji potensi limbah pangan asal kakilima sebagai bahan pakan altematif, khususnya untuk unggas. Penelitian dilakukan dengan survey di 3(tiga) kawasan kota Semarang dengan dasar prospek dan perkembangan kota. Parameter yang diamati adalah produksi dan komponen nutrisi, untuk selanjutnya didiskusikan secara diskriptif kualitatif Hasil penelif an menujukkan, bahwa memperhatikan komposisi nutrisi dan jumlah produksi limbah pangan dari pedagang kakilima kota Semarang , limbah pangan potensial digunakan sebagai bahan pakan alternative bagi pengemb angan peternakan unggas di kota Semarang. Kata kunci: Profil, potensi dan kualitas, limbah, warung makan ABSTRACT In line with PIP UNDIP that is called Coastal Eco Development, effort of IPTEKS development should be associated with contribution in solving of coastal region problems. The city of Semarang, which is characterized by high activity and resident mobility,and food services around tb.e city_consequently_various-garbages-which-is-form-ofrest-offbodstuff¬from kitchen and rest of served food depots, and pedestrian food court kakilima potentially caused an environmental problems. In the other sides, farm businesses having pressure in the form of limitation of feed supply, as an effect of increasing competition which is effort to fulfilling human needs. Experiment was done aimed to study potency of food wastes from food depots, and pedestrian food court kakilima to be an alternative feedstuff, especially for poultry. Experiment was conducted by survey at 3(three) city areas of Semarang, based on the prospect and city development. Production and nutrient component are parameters observed, and that was discussed descriptive qualitatively. Result of experiment showed that refer to nutrient composition and number production of food waste's of pedestrian food court of "kakilima" of Semarang, food wastes potentially proved to be an alternative feedstuff of poultry farming development district of Semarang.
