Abstract

Collagen is one of proteins contain within fishbones and is water-dissolved. Collagen can be used for additive substances for fishbone powder meaning is completely different.Therefore, this study was aimed to find out the effect of collagen produced by different fishbones powder additives on the quality of Nile Tilapia surimi. The surimi of the Nile Tilapia added by collagen from the Stringray fishbone powder was considered as the best surimi based on water content, aw, and gel strength, whereas the Nile Tilapia surimi added by Milkfish collagen was the best surimi based on organoleptic.
