Abstract

Jerked fish is a semi-wet product during storage which will if contacted with O2 therefore from a rancidity in product. White Turmeric extract contains curcuminoids compounds that act as antibacterial and antioxidant. The aims of the research were to examin the use of white turmeric extract as a source of antioxidants as well as the length of the storage of baby tuna and mackerel to PV, TBA, moisture, and Aw and interaction between treatments. There were higly significant interaction ( 0.01) between Eastern Little Tuna and Mackerel jerked fish during storage time to PV content, TBA content and moisture content, Aw content test results.
