Abstract

Peneritian ini bertoruan untuk mengetahui pengaruh panambahen daun kumis kucing (Orthasiphon sp.) pada perebusan terhadap penurunan kandungan logam beret. Materi yang digunakan adaleh daging bagian biceps lemons (BF) clan bngissimus dorsi (LD) dad duo for soar PO jantan yang dipelihara di TPA Jatibarang, Kota Semarang. Penelitian ini rnenggunakan metode kausal-komparati! Analisis logam berat pada daging. balk yang segar ataupun yang direbus dengan penambahan daun kumis kucing 0%, 5% dan 10%, menggunakan Neutron Activation Analysts (NM). Pb dianalisis dengan Atomic Absorption Spectrophotometer (AAS). Samuel sager daging BF den LD pada kedua sapi Menganeung Cr, Cd. Co. Fe, Zn dan Pb. Arsen tidak terdapat pada BF sapi 1. dan LD sapi I maupun 2. Sebagian besar logam beret masih diambang bates yang ditinken (MRL), kecuali As, Co dan Pb. Penggunaan daun kumis kucing dalam perebusan mampu manurunkan kandungan logam beret pada daging BF dan LD pada kisaran 8,1% 90.9%, Beberapa lords logam temt tidak terdeteksi, anlara lain As pada seluruh perlakuark Cd hampir seluruh perlekuan. kecuall BF sapi 2 (0% KK) dan LO sapi 2 (5% KK don 10% KK); Cr pada LD (10% KK). Co pada LD ( pada 5% KK dan 10% KK); Pb pada LD sapi 1 (10% KK) dan LD sapi 2 pada seluruh perlakuan. Lead (Pb) was analyzed by MS. Fresh BF and LO temples of bull 1 and bull 2 contained Cr. Cd, Co, Fe. Zn and Pb. Arsen was not detected in OF of bull 1, and LD of bull 1 and 2. Mast of heavy metals were detected to be above Maximum Residue Limit (MRL). except As. Co and Pb. The use of Prtholiphon lea/ during boiling process was effective In reducing heavy metal content in OF and LD by 8.1% - 90,9%. Some metals were not detected, Le_ As In all treatments; Cd in almost all treatment, except In BF In bull 2 treated by 0% KK and LD of bull 2 treated by 5% and 10% KK; Cr In LD treated by 10% KK; Co In LO heated by 5% KK and 10% KK): Pb In LD of bull 1 treated by 10% KK and LD of bull 2 In all treatments. After boiling with orthosiphon leaf, the content of most of heavy metals decreased under MRL, except Fe. It was concluded that Orthosipbon leaf supplementation reduced heavy metal content in BF den LID.
