Abstract
Sanitasi makanan merupakan kegiatan aseptik dalam persiapan, pengolahan dan penyajian makanan, pembersihan peralatan, sanitasi lingkungan kerja. Meskipun proses pembersihan telah dilakukan, belum ada jaminan bahwa cemaran mikrobiologis, terutama bakteri telah dapat dihilangkan. Oleh karena itu proses pembersihan harus diikuti dengan desinfeksi peralatan yang dipakai. Mengatasi bakteri tersebut pemilihan klorin sebagai bahan desinfektan merupakan alternatif yang cukup efektif dan mudah penanganannya. Penelitian ini, memakai perendaman alat makan plato dalam larutan kaporit yang mengandung klorin dengan kadar 10 ppm, 20 ppm, 40 ppm dan 50 ppm selama 2 menit. Rancangan penelitian ini adalah eksperimen semu dengan bentuk rancangan pretest dan post test design . Perbedaan perlakuan perendaman pada larutan kaporit terhadap ALT sebelum dan sesudah desinfeksi diuji dengan uji t sampel berpasangan sedangkan pengaruh berbagai konsentrasi terhadap persen penurunan ALT setelah perlakuan diuji dengan uji regresi linier. Hasil penelitian ini pada kaporit kadar 10 ppm dengan waktu kontak 2 menit dapat menurunkan bakteri sekitar 94,76%, 20 ppm sebesar 97,14%, 30 ppm sebesar 99,78%, sedangkan 40 ppm dan 50 ppm dapat mereduksi 100%. Dari hasil uji one way Anava terbukti penambahan kadr kaporit signifikan memberikan pengaruh yang berbeda pada ALT, hal ini ditunjukkan dengan hasil dari nilai F hitung 56,984 dengan besarnya alfa = 0,05, sedangkan dari hasil ALT sesudah desinfeksi dengan uji Tujey ternyata kadar 30,40 dan 50 ppm mempunyai rata-rata persentase yang sama. Dari penelitian tersebut dapat disimpulkan bahwa pemakaian klorine kadar 10 ppm sekitar 41 koloni/cm2 sudah dapat memenuhi persyaratan Kepmenkes 714/Menkes/SK/V/2003. Sedangkan untuk menghasilkan kondisi steril, dapat digunakan kaporit 40 ppm. Kata Kunci: Angka lempeng total desinfeksi, konsentrasi kaporit THE INFLUENCE OF SOME CHLORINE CONCENTRATION TO THE TOTAL PLATE COUNT IN DISINFECTION OF THE EQUIPMENT PHLATO DEASES (THE STUDY IN PUBLIC HEALTH CENTER SOKARAJA I, BANYUMAS) Food sanitation consist of aseptic activity for preparing, managing and food presentation, equipment cleanning, work environ sanitation. Despite the cleaning process is done, there is no guarantee that contaminat microbiology, especially bacteria is eliminated. Therefore, this ceaning process should be followed by desinfecting the equipment using. In order to eliminated bacteria, the aim of chlorine study was the chlorine choosen as desinfectant material is effective enough and easier in treatment. In this research, using the soaked plato eating equipment in solution wich contains chlorine with 10 ppm, 20 ppm, 30 ppm, 40 ppm and 50 ppm about 2 minute. This study was designed as quasy experiment in pre test and post test pattern. The effect of soaked treatment of chlorine solution to TPC before and after desinfection was percentage after the treatment was tested by using linierregression test. In this research, it was reached taht chlorine in the concentration 10 ppm with time contact about 2 minute decrease bacteria up to 94,76%, 20 ppm up to 97,14%, 30 ppm up to 99,78%, whereas 40 ppm and 50 ppm eliminated 100%.The one way anva statistic test proved taht additional of chlorine corelate with percentage of TPC have showed different results. It was swown that F calculated is greater than F table with alfa=0,05 whereas from TPC after desinfection by using Tukey test, the using of 30ppm, 40 ppm and 50 ppm, percentage of concentration are the same. It is concluded that 10 pm chlorine concentration about 41 colony/cm2, it completes prerequirment from Kepmenkes 715/Menkes/SK/2003. Whereas in order to procedure sterile condition, chlorine concentration about 40 ppm can be used. Keyword : chlorine concentration, desinfection, total plate count
