Abstract

Grading merupakan salah satu kegiatan dalam usaha penyehatan makanan (Penetapan tingkat mutu).Makanan yang meskipun ditinjau dari gizi menguntungkan,dapat menimbulkan beberapa akibat terutama penyakit menular dan keracunan jika penanganannya kurang baik. Tujuan penelitiasn ini adalah mempelajari hubungan antara tingkat mutu (grade) rumah makan dengan kandungan escherichia colipada nasi rames. Penelitian ini merupakan Observational Studydengan pendekatan Cross Sectional.Sedangkan analisa statistik yang digunakan adalah chi Square.Rumah makan yang menyedikan nasi rames di sepanjang jalan Raya Sukowati,Rumah makan yang berada di sepanjang Jl.Sukowati Kabupaten Sragen adalah sebanyak 61 rumah makan.Tetapi rumah makan yang telah mendapatkan gradesebanyak 34 rumah makan.Sampel dari penelitian ini adalah 29 sampel nasi rames yang setelah diperiksa didapatkan angka MPN Escherichia Coliyang bervariasi,yaitu berkisar antara 2/gr- 176/gr. Sedangkan sampel nasi rames yang diperiksa yang memenuhi syarat sebanyak 18 sampel dan yang tidak memenuhi syarat sebanyak 11 sampel, berdasarakan SK Dirjen POM No. 03796/B/SK/VII/89 yaitu batas maksimun cemaran mikroba dalam makanan adalah sebesar 100/gr. Berdasarkan hasil uji statistik didapatkan X2 Hitung = 10,830 dan p-value 0,001<0,005 Ho ditolak dan Ha diterima yang berarti ada hubungan tingkat mutu rumah makan dengan kandungan E.Coli. Sebagai saran,lebih meningkatkan hygiene dan sanitasi makanan dirumah makan,pengawasan yang teratur dan ketat oleh pihak pengelola program agar hygiene dan sanitasi makanan dan rumah makan dapat terjamin. Kata Kunci: Tingkat Mutu Rumah Makan Kandungan Escherichia coli, Nasi Rames THE CORRELATION BETWEEN QUALITY GRADE OF RESTAURANT AND ESCHERICHIA COLI CONTENTS IN THE FOOD OF NASI RAMES ON SUKOWATI HIGHWAY,SRAGEN REGENCY,2003 Grading is none of activities in the effort of food sanitation (quality grade determining). The food,though,viewed from nutrient is profitable,however it can cause some effects,particulary contaminate disease and poisonedif its handling is not well enough. The aim of this research is to leam the correlation between quality grade of restaurant and Escherichia Coli contents in the food of nasi rames. The research was Observational Study with Cross Sectional approach. Meanwhile the statistical analysis used in the research was Chi Square. Restaurants providing nasi rames along Sukowati Highway,Sragen Regency are in the amounts of 61 restaurants. However,restaurants tat have obtained grade are in the amounts of 34 restaurants. Sample of the research was 29 samples of nasi rames that afterbeing checked it was obtained MPN grade of Escherichia Coli which has variaton,namely ranges from 2/gr - 176/gr. Meanwhile checked samples of'nasi rames that fulfillthe requirements were in the amounts of 18 samples meanwhile samples that didn't fulfill the requirements were in the amounts of 11 samples. based on the Decree of POM Directorate General No.03796/B/SK/VII/89 namely maximum limit of micobe spreading is the food is in the amounts of 100/gr. According to the statistical test result,it was obtained X2 account + 10.830 and p -value 0.001 < 0.005 Ho was refused and ha was accepted which means that there was a correlation between quality grade of restaurant and Escherichia Coli contents. For the suggestion, in order to more increase the food hygiene and sanitation in the restaurant, the strict and regular controlling by the program manager, so that the food and restaurant's hygiene and sanitation can be quaranteed.
