Abstract

ABSTRAK Penelitian ini bertujuan untuk mengetahui pengaruh “leaching” (pencucian) terhadap beberapa karakteristik fisiko-kimia nikumi kuda dan sapi. Penelitian ini menggunakan rancangan acak kelompok dengan pola faktorial. Faktor pertama adalah jenis daging yaitu daging kuda dan daging sapi, faktor kedua adalah frekuensi pencucian ( 0, 3,6 dan 9 kali). Peubah yang diamati meliputi protein larut garam, pH, Daya Mengikat Air (DMA) dan kekuatan gel. Hasil penelitian menunjukkan peningkatan frekuensi leaching sangat nyata (P<0,01) menurunkan persentase protein larut garam tetapi memperbaiki DMA nikumi. Kekuatan gel dan pH nikumi kuda lebih tinggi dari nikumi sapi tetapi DMA lebih rendah dari nikumi sapi. Kekuatan gel nikumi kuda paling tinggi pada leaching 9 kali tetapi pada nikumi sapi kekuatan gel tertinggi terdapat pada leaching 3 kali. Kata kunci: pencucian, nikumi, daging kuda, daging sapi ABSTRACT This research was aimed to study the influence of leaching on salt-soluble protein, pH value, water holding capacity (WHC) and gel strength of horse and beef nikumi. The experiment was set in randomized block factorial design with two factors, namely kind of meat (horse and beef) and leaching (0; 3; 6; 9 times). The results of this study showed that increased leaching frequency would decreased significantly saltsoluble protein percentage but improved water holding capacity of nikumi. Gel strength and pH value of horse nikumi were higher than beef nikumi but water holding capacity was lower either. Gel stength of horse nikumi was highest on leaching 9 times but 3 times on beef nikumi. Keywords : leaching, nikumi, horse meat, beef
