Abstract

Neem (Azadirachta indica) is a mahogany tree in the mahogany family Meliaceae. Neem contains active ingredients such as azadirachtin, salanin, meliantriol, nimbin, and nimbidin. The function of nimbidin is for antimicroorganism, like antivirus, antibacterial, and fungiside. Nimbidin is one of the active compounds that most found in the neem leaf. This neem leaf was extracted to obtain the active compound. The solvent which used in the extraction was water. This neem leaf extract was used as tofu preservation. The function of this active compound in the neem leaf extract is as for anti bacteria that can spoil tofu. The aim of research is to determine the effect of neem leaf extract on food preservation
