Sorgum was cerelia plant come from Ethiopia and Sudan Africa. Sorgum have some Indonesia name as gandrung, jagung pari and jagung chantel. All this time sorgum stalk have been use only for cattle food. Sap was obtained by tapping inflorences of sorgum stalk can used to make etanol. The composition of sorgum sap almost same as sugar cane sap. Etanol obtained by fermentation with saccharomyces cerevisiae. The goal of research were to study the exploration etanol from sorgum sap by fermentation, the relation between reaction time and starter volume percentage, and the most influence variable to produce alcohol. Fermentation was one of biochemical process to produce alcohol. pH, reaction time, nutrient, temperature, sugar content influence fermentation process. Researced start with preparation of sorgum sap, mixed it with nutrient then add starter (5%, 6%, 7%, 8%, 9%, 10%) time reaction was 7 day and pH 5. Analyzed alcohol content and rest reduction sugar content. The highest alcohol content was 11,82% with optimum condition 9% of starter volume.
