Abstract
Konsusi energi dan protein santri putri di Pondok Pesantren Persis 85 Banjar masih kurang. Hal ini dapat dilihat dari konsumsi energi (TKE) total dan tingkat kecukupan protein (TKP) total sebagian besar masih di bawah angka kecukupan gizi (AKG) yang dianjurkan. Bila berlangsung dalam waktu yang cukup lama akan menyebabkan status gizi kurang. Pada remaja putri usia 10 - 18 tahun terjadi pertumbuhan fisik yang cepat dan perubahan hormonal yang menyebabkan terjadinya keluhan kurang leluasa bergerak dan cepat letih, sehingga diperlukan energi dan protein dalam jumlah yang cukup. Penelitian ini bertujuan untuk mendapatkan gambaran penyelenggaraan makanan di Pondok Pesantren Persis 85 Banjar. Faktor yang diteliti pada penelitian ini adalah konsumsi energi santri, konsumsi protein santri dan status gizi santri. Jenis penelitian deskriptif analitik dengan metode survey dan pendekatan Cross sectional. Lokasi penelitian di Pondok Pesantren Persis 85 Banjar, dengan responden 45 orang santri putri usia 10-18 tahun yang tinggal di pondok pesantren. Sumber data diperoleh dengan metode recall, pengukuran BB, dan data sekunder dari pihak pondok pesantren. Analisa data secara deskriptif dan analitik dengan menggunakan uji korelasi Pearson, dengan taraf signifikansi 0,05. Pengolahan data dilakukan dengan komputerisasi. Hasil penelitian menunjukkan bahwa makanan yang dikonsumsi dalam jumlah yang sedikit merupakan faktor utama yang menyebabkan kurangnya konsumsi energi dan protein para santri. Hasil perhitungan menunjukkan 100 % TKE dan TKP yang disediakan pondok pesantren berada di bawah AKG yang dianjurkan, serta 60,00 % mempunyai TKE kurang dan 40,00 % mempunyai TKP yang kurang. Berdasarkan perhitungan Z-Skor (BB/U) didapatkan 97,80 % berstatus gizi baik dan 2,20 % berstatus gizi kurang. Hasil uji Korelasi Pearson menunjukkan ada hubungan yang bermakna antara TKE (nilai p = 0,023) dengan status gizi dan TKP (nilai p = 0,011) dengan status gizi. Sebagai masukan bagi pihak pondok pesantren untuk perbaikan penyelenggaraan makanan agar dapat mencukupi kebutuhan energi dan protein bagi para santri. This can be seen from the energy consumption level and protein sufficiency level of maind food and various kind of snack. Most of them is still under the suggested nutrition sufficiency rate. If this situation persisted for long time, it may cause less nutrition status. Girl (10-18 years old), in addition to fast physical growth, there is also hormonal changes causing complaint that they can't move freely and feel tired, so that nutrient essences especcialy energy and protein in adequate amount are required to support this important phase. This reseach has purpose to get the description of food management at "Pondok Pesantren Persis 85" Banjar. Factor observed in this research is energy consumption, protein consumption and "santri" nutrition status. Kind of research was analytical deskriptive by survey method and cross sectional study. The research location was at "Pondok Pesantren Persis 85" Banjar, with respondents are 45 of "santri putri" age 10-18, lived at "pondok pesantren". Data source was obtained by using recall method and weight measuring, meanwhile secondary data was obtained from "pondok pesantren". Data analysis was conducted descriptive and analytical by using Pearson correlation test, with 0,05 significancy level. Data processing was conducted by computerization. The result of research indicate that food which is consumed in small number is the main factor causing lack of energy and protein consumption by "santri". Calculation result indicate that 100 % of energy and protein sufficiency level provide by "pondok pesantren" is under suggested nutrition sufficiency rate, and also 60,00 % has less energy sufficiency level and 40,00 % has less protein sufficiency level. Based on the Z-score of weight by age, it is obtained that 97,80 % has good nutrition status and 2,20 % has less nutrition status. The result of correlation test indicate that there is a significant correlation between energy sufficiency level and nutrition status (p-value = 0,023) and also between protein sufficiency level and nutrition status (p-value = 0,011). For the "pondok pesantren", it would be better if they can fulfill energy and protein needs for "santri" in order to improv their food management.
